Abundance of Apples? Here you are! No crust, no sugar!
3 8oz pkg’s of cream cheese
1 Tb freshly squeezed lemon juice
2 tsp vanilla
1 tsp maple flavoring
3 eggs
3-4 apples, cored, peeled and sliced
3 Tb butter
1 tsp cinnamon OR 1 tsp Chinese five spice powder (optional…it is just my favorite!)
½ tsp nutmeg
½ chopped nuts
Liquid stevia to taste (approximately 2 droppers full)
Combine cream cheese, juice and flavorings, mixing at medium speed until well blended. Blend in one egg at a time, beating well after each addition. Pour into a greased (with butter or coconut oil) 9” glass pie plate.
Saute apples in butter until soft. Add spices and Stevia.
Place sauteed apples over cream cheese filling and gently press into the cream cheese. Sprinkle nuts over the apples. (Pie plate will be quite full. I baked it on a cookie sheet in case it ran over.)
Bake at 325 degrees for approximately 40- 50 minutes (the top should puff a bit).
(This is plenty sweet enough for me but if someone prefers it a bit sweeter, you can always drizzle maple syrup over when serving…:)
