¼ cup butter or coconut oil, melted
1 large ripe banana, mashed
½ tsp salt
1 tsp vanilla
½ cup coconut flour
½ tsp baking powder
½ cup walnuts or pecan, optional
Blend together eggs, butter, banana, salt and vanilla. Combine coconut flour with baking powder and whisk into batter until there are no lumps. If desired, fold in nuts. Pour into greased muffin cups or cupcake liners. Bake at 400 degrees for 15-18 minutes. Makes 7 full size muffins.
