1lb carrots, peeled and shredded
3 Tb’s coconut oil
3 Tb’s rice vinegar (preferably raw)
1/3 cup organic raisins (optional)

Melt coconut oil over low heat if necessary; pour coconut oil and vinegar over carrots. If desired, add raisins. Mix well. This salad keeps fresh in the refrigerator for days…perfect quick snack to keep on hand!
